I FOUND IT!!!

I spent my lunch hour digging through a box of old magazines, cookbooks, printed off and hand-written recipes and found my cookie recipe!! It's from a magazine called Country Home and there is still dough and oats stuck to the pages, lol!! Here it is - they are AMAZING!!!

Pumpkin White Chocolate Chunk Cookies

2 C all purpose flour
1 tsp Baking Soda
1 C Butterscotch chips
12 Tbsp (1 1/2 sticks) butter, softened
2/3 C granulated sugar
2/3 C packed brown sugar
1 large egg
2/3 C canned pumpkin puree
1 C regular rolled oats
1 1/2 C white chocolate chips or 8 oz white baking chocolate cut into 1/4-in chunks
1 C chopped pecans, optional

Mix the flour and the baking soda in a food processor until mixed evenly. Add butterscotch chips and pulse until the chips are ground. Put the flour mixture into a large bowl.

In a separate large bowl, use an electric mixer to cream butter and sugars for 2-3 minutes, scraping the sides often, until fluffy. Add the egg and the pumpkin and stir to combine.

Pour pumpkin mixture into flour mixture and stir to combine. Add oats, white baking pieces and nuts. Stir until the ingredients are combined and no flour is visible. Cover bowl and refrigerate at least 1 hour or overnight.

Preheat oven to 350. Line 2 cookie sheets with parchment paper or grease lightly. Drop spoonfuls of dough onto prepared cookie sheets, leaving 2 inches between cookies. Bake for 13-15 minutes or until cookies are light golden brown. Cool cookies on cookie sheets for 2 minutes before transferring them to a wire rack to cool completely.

Makes approx 2 doz of the BEST COOKIES EVER!!!
